Ingredients

  • 4 eggs
  • 250g wholemeal flour
  • 600 ml of milk (vegetable or skimmed)
  • sweetener to taste
  • Season’s fruit

Preparation methods

  • Beat the eggs.
  • Add the milk and beat again.
  • Add the wholemeal flour. Mix until you get a lump-free dough.
  • Heat a frying pan and cover the base with a light layer of olive oil.
  • With the help of a saucepan, take a little of the dough and pour it into the pan, moving it in circles so that it spreads over the entire surface.
  • As soon as you see that it has browned on one side, grab it by one corner and turn it over.

Preparation time: 30 minutes

OATMEAL PANCAKES

Another option to make crepe recipes with a healthier dough is to replace the flour with oatmeal (you can buy oatmeal or grind the oatmeal in a mill).

The dough can be made once a week, kept in the fridge and kept on hand to prepare them quickly when we feel like it, giving them a quick heat in the pan over and over. To accompany them we suggest its sweet version with melted dark chocolate, in its salty version with avocado, tomato and a little fresh cheese.

Preparation methods

  • Beat the eggs, adding the milk and sweetener (sugar, honey…).
  • Add the oatmeal and beat again until the dough is smooth.
  • Heat a frying pan and grease it thoroughly with a little oil (the excess can be removed with a paper napkin, and this process will be repeated when we see that it dries).
  • Pour the dough little by little with a saucepan, spreading it over the entire surface of the pan and trying to make it thin.
  • When it’s done on one side, flip it over so it’s done on the other: you can help flip it over with a spatula or encourage it to flip in the air with a good flick of the wrist (which is much more fun!).

PANCAKES STUFFED WITH HAM AND CHEESE

  • 150g of flour
  • A glass of milk
  • a pinch of salt
  • Olive oil
  • York ham
  • Cheese

Preparation methods

  • Mix all the ingredients (as we have indicated in the previous crepe recipes).
  • Grease the bottom of the pan with a drop of olive oil.
  • Add the dough with the help of a ladle or saucepan until it covers the bottom of the pan.
  • When it has set on one side, turn it over and wait for it to set on the other side.
  • Remove to a plate and add grated cheese and cooked ham.
  • Roll up the crepe and return it to the pan until the cheese has melted.
